Artichoke Squares

Saturday, we had a Breakfast on the Beach Party.  These artichoke egg squares were an instant hit.  Perfect hot or cold, great as an appetizer, ideal for a picnic, and for our breakfast, delicious stuffed into a croissant!

2  6oz jars marinated artichoke hearts, chopped fine( I used 14oz can artichoke hearts in water, drain)
1 small onion chopped fine
1 clove garlic, minced
5 eggs
1/3 cup dry bread crumbs
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano
1/4 tsp. Tabasco
1/2 lb. sharp cheddar cheese, grated
2 Tbs. parsley, chopped
2 Tbs. parmesan cheese, grated

1. Drain marinade from 1 jar of artickokes into frying pan
2. Drain off remaining jar of artichokes
3. Saute chopped artichokes, onion and garlic in marinade until softened
4. Beat eggs with fork, add bread crumbs, salt, pepper, oregano, Tabasco, cheddar cheese and parsley.
5. Add sauted artichoke mixture to egg mixture.
6. Pour into slightly buttered 7x11 baking pan. Sprinkle top with parmesan cheese.
7. Bake in preheated 325 degree oven for 30 minutes. Remove from oven, cool slightly and cut 
     into squares.
