Irish Soda Bread

Golden and crunchy on the outside!

Tender and moist on the inside!

This recipe comes from my Irish Nana! I love this Irish Soda Bread, especially warm out of the oven. It is equally delicious when toasted, to get a nice crispy crunchy crust, and the butter melts into the little crevices.

2 cups flour
2tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 Tbs. sugar
3 Tbs. butter
1 cup buttermilk
1/2 cup raisins

Sift flour with baking powder, sugar, soda and salt.  Cut in butter with knife or pastry blender, until mixture resembles fine meal. Add buttermilk mix well. Gently fold in raisins.

Turn into greased 8" loaf pan and spread evenly. Bake 350 degrees, 35-40 min. or til brown. Let cool slightly before cutting and serving.
