Even when it is a leftover, St. Patty's Day fare is always a treat!
Cornbeef, crusted in pickling spices, oven roasted potatoes and carrots, and seared cabbage wedges, it is all so delicious, even when eaten after March 17th.
The recipe is featured as a post from last March. Although there is the addition of the roasted carrots. Toss the cut carrots in some melted coconut oil, and add to your pan of potatoes to be roasted in the oven. The natural sweetness of the carrots will really shine!
