Spicy Avocado Hummus

Delicious in a sandwich or with chips.

My friend Doris loves this hummus!  Recently she was unable 
to purchase the Hope brand of this hummus at Costco, and 
she then decided to try making it herself. 

She forwarded the recipe to me, and I had to make it right away.
It is really delicious, not too spicy, and a perfect blend between 
regular hummus and guacamole!

INGREDIENTS
  • 2 cups garbanzo beans,(I used 2 cans, drained)
  • 2 avocados
  • 1 jalapeno, stem removed
  • 2 cloves garlic
  • 2 TBS fresh cilantro
  • 1 TBS tahini
  • 1 tsp salt
  • ¼ cup olive oil
  • ½ cup water or cooking liquid(reserved from the can when you drain the beans)
  • ¼ cup lime juice or lemon juice
INSTRUCTIONS
  1. Slice your avocado is half and remove the pit.* Scoop the fruit from the shell with a spoon.
  2. Blend all the ingredients together in a blender or a food processor until smooth. If necessary drizzle in additional small amounts of olive oil until it reaches your desired consistency.
  3. Put in a bowl and garnish with fresh cilantro and diced tomatoes if desired. Serve with homemade tortilla chips and cut vegetables.
