This is a great do-ahead recipe. The baguette rounds can be toasted a day
or two ahead, and the shrimp mixture can also be prepared ahead and chilled.
If preparing in advance, mix all ingredients together, except the feta cheese.
When ready to serve mix in the feta.

- 1/3 cup olive oil
- 3/4-1 lb. small fresh shrimp, peeled and deveined
- 1 1/2 tablespoons minced garlic
- 2 large plum tomatoes, seeded and finely chopped
- 1/2 cup sliced green onion
- 1/2 cup crumbled feta cheese
- 1/4 cup finely chopped parsley
- 1 tablespoon fresh lemon juice
- 2 teaspoons minced fresh thyme
- 1 teaspoon Greek seasoning
- 1 French baguette, cut diagonally into 1/4 inch-thick slices
